 Homemade Chicken Pot Pie

Ingredients
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped carrot
3 tablespoons butter or margarine 1/4 cup all-purpose flour, sifted
1 cup chicken broth, plus 1/2 chicken bouillon cube (or equivalent) 1/2 cup milk or 1/2 and 1/2 (any % milk works)
1-2 cups chicken, cooked and chopped
1/2 cup frozen peas, thawed
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 sprig fresh thyme, or equivalent 1 unbaked pie crust

Instructions
TO MAKE FILLING:
1- Sauté the first 3 ingredients in butter over medium heat until tender. Add flour; stir until smooth. Cook 1 Minute, stirring constantly. Add chicken broth and milk; cook stirring constantly until thickened and bubbly.
2- Stir in chicken, peas, salt, pepper, and thyme. Cool before adding top crust. VERY important!

FREEZING INSTRUCTIONS:
1- At this point you may freeze the filling in a labeled freezer safe container/bag. To prepare from frozen, read instructions below.
2- Or you may assemble the whole pie and freeze whole.
3- To do that, prepare crust. Roll it out. Pour filling into greased pan. Cover with crust, folding edges under and crimp. Cut slits in the top.
4- Cover with foil, label and freeze. See below for preparation instructions.

TO PREPARE POT PIE FROM FRESH:
Bake uncovered, at 375 degrees, for 35-45 minutes or until crust is golden brown. Let stand 10 minutes before serving.

TO PREPARE POT PIE FROM FROZEN:
1- Thaw filling in refrigerator. Stir, and assemble as described above. Bake accordingly. OR, you may bake the whole pie from frozen.
2- To do so, preheat oven to 375 degrees.
3- Bake, uncovered, for 30 minutes, then cover with foil and bake 30 more minutes. Remove from oven and let rest for 10 minutes before cutting. Serves 8.
4- Freezes very well separately or fully prepared in the crust. Try them both and see which way you prefer!

Ingredients
3 cups all purpose flour
1 tsp. Salt
1 1/2 cups (3 sticks) cold butter 1 Egg
5 T. cold water
1 T. distilled white vinegar

Instructions
Combine the flour and salt in a large bowl. Using pastry blender, gradually work the butter into the flour until the mixture resembles tiny pebbles. This step should take 3-4 minutes.
Lightly beat the egg with a fork, and then add to the mixture. Next, add in the cold water and vinegar. Stir the mixture together until it is just combined.
Divide into 3 or 4 parts, depending on how thick you want the crust and how many crusts you need. Roll out each piece on floured surface, 1”large than the pan. (Add more flour if the dough is too sticky.)
Place on top of cooled filling in pan. Fold edge under and crimp.

Sausage and Potato Breakfast Casserole

Yield 4-6 servings Ingredients
4 cups tater tots
1 pkg. country gravy sausage flavor
1 1/2 cups water
1/2 cup cooked and crumbled sausage
2 eggs
1 1/2 cups cheddar cheese, shredded
1 tablespoon fresh green onions or chives (optional)
Instructions

TO ASSEMBLE CASSEROLE:
1- Bake tater tots in the oven for 28-32 minutes to crisp.
2- Meanwhile, make gravy according to package directions, with 1 1/2 cups water. Set aside to cool.
3- Pour cooked tater tots into greased 9” pan.
4- Evenly sprinkle sausage on top of potatoes.
5- Beat eggs, blend into cooled gravy, and pour evenly over all.

FREEZING INSTRUCTIONS: Cover with foil, label and freeze.

TO PREPARE FROM FRESH:
1- Bake 25-30 minutes, or until filling is set in center.
2- Sprinkle on cheese and bake another 3 minutes, or until melted. 3- Garnish with green onions., if desired.
4- Cut into wedges and serve.

TO PREPARE FROM FROZEN:
1- Thaw in refrigerator.
2- Uncover, and bake for 30-45 minutes.
3- Test to see if filling is set in center. Bake longer if needed.
4- Sprinkle on cheese and bake another 3 minutes, or until melted. 5- Garnish with green onions, if desired.

Ingredients

1 clove garlic, minced
3 tablespoons butter or margarine
2 cups cooked beef roast, cooked and chopped 2/3 cup frozen peas, thawed
2/3 cup chopped cooked carrots
1 1/2 cups cooked potatoes, cubed 1/4 teaspoon pepper
1/3-1/2 tsp. dried thyme
2 cups beef gravy
1 unbaked pie crust

Campurritos

Campurritos! // Because Camping Should Be Fun!
Ingredients
  • 16 Eggs
  • 1 lb. Sausage
  • 1 Yellow Onion
  • 3 Cloves Garlic, minced
  • 6 Med. Potatoes, chopped
  • 2 Cups Cheddar Cheese, shredded
  • 4 Green Onions, chopped
  • 3 T. Parsley, chopped
  • 8 or 9 Tortilla Shells
  • Salt & Pepper to taste
  • Tin Foil for wrapping
  • Optional: Salsa and/or hot sauce

    Directions:
  • Chop potatoes and boil until soft.

    Chop green onions and set aside.

    Crack 16 eggs and cook over low heat until you have soft, scrambled eggs. Salt and pepper to taste.

    Saute yellow onions and garlic in olive oil until fragrant. Add sausage to onion mixture and cook all the way through.

    In large bowl combine sausage mixture, scrambled eggs, potatoes, cheese, green onions, parsley, and salt and pepper.

    Divide ingredients into 8 or 9 tortilla shells. Roll and wrap in tin foil -- ready to throw on the fire!

Shepherd's Pie

Ground beef or turkey
Frozen peas
Frozen corn
brown gravy mix
Ketchup
Worcestershire sauce
Instant Mashed potatoes
Cheese

1. Brown ground beef (or turkey)
2. Drain
3. Add  gravy mix and frozen veg and stir in. Sometimes I add a little water but usually the water from the frozen peas and corn is enough to keep it moist.
4. Add ketchup and worcestershire sauce to taste
5. Put everything in a pan and top with mashed potatoes and cheese.

Freeze OR bake 400 degrees for 30-40 minutes until warmed through. Take foil top off and bake for about 5 minutes to brown cheese.

Ziti Casserole

Ziti Casserole
1 lb. Ground turkey
1 bag ziti noodles (or any other fun shape)
1 bag of Colby Jack Cheese, shredded
1 bag of Parmesan Cheese, shredded, (I use Kraft grated in the bottle)
1 jar of Prego 3 cheese Sauce
1 can cream of mushroom soup
1 can cream of Chicken Soup
oregano to taste
salt & pepper to taste

Boil noodles according to directions on package.
Brown ground turkey and season to taste. Add some salt, pepper, and a dash of oregano.
When meat in browned and drained of excess oil, add Prego, cream of mushroom and cream of Chicken soup. Let simmer for 10 minutes, stirring occasionally so that all the sauces blend.
By this time the noodles should be done and drained.
Now you can begin layering the casserole. Grease your 9x13 casserole dish.
Start with the noodles, then add the meat sauce, then add a layer of each cheese. Repeat until all of your ingredients have been used. Once the layers have reached the top of the pan, you can sprinkle some extra Parmesan cheese on top. Bake at 350 for 20-25 minutes, or until the top is melted and golden brown.
